Creamy Broccoli Cheddar Soup
2 large or 4 appetizer portions
- 1 T coconut oil
- 1 large onion, diced
- 6 cloves garlic, minced
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon Tony's Creole Seasoning
- 1 cup cooked white beans
- 1/2 cup sauerkraut
- 16 oz frozen broccoli
- 1 cup Chipotle Cheddar spread
- 1/4 cup nutritional yeast
- 3-4 cups vegetable broth
- small pinch nutmeg
- Lots of freshly ground pepper and smoked sea salt to taste
Method:
- Saute onion, garlic , rosemary with the Tony's for 5 minutes
- Add the White beans, sauerkraut, broccoli, cheddar spread, yeast and veggie broth.
- Bring to a boil, cover and reduce heat to simmer.
- Cook for 15 minutes
- Puree with an immersion blender and adjust seasonings
