This cooking/typing with one hand is annoying. My cut is doing somewhat better. It is still bleeding a bit. The curse of having no health insurance.. it could have used stitches, but I am not about to spend the money on them. Moving on... this dish is a true one pot meal and used leftovers. My favorite type of dish. Monday is the day I usually deep clean my house, use up all my leftovers and clean my fridge. Today I only used my leftovers; sauteed arugula and garlic, zukes and tomatoes, sauteed mushrooms, 14 oz lite firm tofu, fresh basil and some pasta cooking water to make this sauce. Just before serving, I added freshly grated nutmeg and pepper as well as a bit of nutritional yeast and truffle oil. Very good.
Simple and delicious if you miss the canned thing. For me, it was a junk, comfort food as a child, so being able to re-make this at home is a good thing. There is no Martha Stewart in this recipe; just simple onion, garlic, frozen mixed veggies, fresh potatoes, tomato sauce, veggie stock, soup pasta and a splash of vinegar. I make a gallon at a time. My oldest son will eat a quart at a time as a snack... oh, and I add some beans to make it a bit more substantial.
Alphabet soup was also my 'junk food' growing up..but at the same time was probaly a 'healthy' meal to me. Yours looks so, so good. Amy's makes a canned version that doesn't look that lovely - at all. (hers is rather bland)

I hope your hand gets better. Sometimes aloe vera jelly helps, but I don't know about a big wound. Congradulations on your job offer! It's great that you could find a veg job. Pasta looks good (to me, all pasta looks good and tastes good). So how did you can the soup? I've always been interested in canning at home, but I've also always been afraid of dramatic nutrient loss and food spoilage.

Melody - I got a terrible cut once, but refused stitches, but I used some butterfly tape - I think that's what it's called. It held everything together really well while the bleeding subsided.

ReplyDeleteLiliy, I actually didn't can the soup. I store a lot of my soups and sauces in mason jars. I actually haven't tried any canning yet.. but it is on my To-Do list!

ReplyDeleteYour tabouli was a big hit at my house by the way. I think we'll be making it often as the spring farmers market will begin here next month and fresh herbs are about to get a whole lot fresher and cheaper!
